La Cime × été Collaboration Dinner

Our chef, Natsuko Shoji, has held a collaboration dinner with Yusuke Takada of La Cime, one of the chefs she most admires.

The two set out to create a complete collaboration course, one in which every dish was composed by both chefs rather than served in turn. It is their answer to the question they kept returning to: what a true collaboration should be. Such a course could not have come together overnight. Nearly three months of preparation, of trials and refinements, preceded the evening.

The menu was built around ingredients from Osaka, where Chef Takada is based, and from Amami Oshima, his hometown. Drawing on the techniques each has developed over a long career, the two composed a course in which the hand of both chefs can be felt in every dish. Held with the support of Dom Pérignon, the course was paired throughout with its champagnes. Both chefs are members of the Dom Pérignon Society.
